2 - 2 ½ lbs Pork Loin, cut into 4 pieces, excess fat removed

Salt and Pepper

1 Cup BBQ Sauce

Pat pork loin dry and season with salt and pepper on all sides. Heat 5qt waffle bottom pressure cooker on medium high heat. Sear pork on all sides. Put on pressure lid and pressure at the second ring for 25-30 minutes. Let pressure drop on its own for 15 minutes then drop under cold water. Remove pork and shred into a bowl. Stir in 1 Cup sauce into shredded pork, more if needed.
