Pumpkin Pie Roll Ups

1 ½ Cups Hot Water 115°

1 Cup Pumpkin Puree

3 Tbsp. Saf Instant Yeast

1/2 Cup White Sugar

1/2 Cup Butter Softened

1 tsp. Salt

1 Egg

1 tsp Sweet Spice Blend

Approx. 5 Cups White Unbleached Flour

Filling:

1 - 2 Cups Pumpkin Pie Custard

1 - 2 Cups Spiced Candied Pecans, Chopped

 

Add water, pumpkin puree, yeast, sugar, salt, and 3 cups flour in Bosch bowl with dough hook and mix thoroughly. Add, eggs, butter and more flour.  Mix on speed 2 adding more flour add needed to make a soft wonderful dough.  It never pulls the sides of the bowl clean, but almost.  Knead for a full 5 minutes after the last flour is added.

 

Pour dough out on oiled surface and roll out the dough into a rectangle, approx. 1” thick. Spread pumpkin custard over entire surface leaving 1” border at the top long side, sprinkle, candied pecans over custard. Loosely roll the dough, starting with the long side and ending with the clean inch side. Cut with dental floss or a sharp dough cutter 1 ½ to 2” rolls. Place on parchment lined cookie sheet, let rise until doubled in size. Bake at 350° 20-25 minutes.

 

Allow rolls to cool, then frost with cream cheese frosting.

 

PUMPKIN PIE CUSTARD

 

3 Egg Yolks

1 Whole Egg

1 ¼ Cups Half & Half

¾ Cup Brown Sugar

½ Cup White Sugar

1 Tbsp White Flour

1 Tbsp Sweet Spice Blend

½ tsp Fresh Ground Nutmeg

1/8 tsp Fresh Ground Black Pepper

½ tsp Salt

2 Cups (1 - 15 oz can) Pumpkin Puree

 

In the Vitamix add the ingredients in the order listed except the pumpkin puree. Blend for 90 second starting on speed 3 then gradually increase to speed 10.

 

After 90 seconds, turn Vitamix off and add pumpkin puree. Blend on speed 10 for 5 minutes. Pour custard into a bowl and refrigerate until well chilled and thickened.

 

CANDIED NUTS

 

4 Tbsp Granulated Sugar

3 Tbsp Brown Sugar

2 Tbsp Cornstarch

1 -2 tsp Sweet Spice Blend

1 tsp Salt

1 Egg White

3 ½ Cups Pecan Halves

 

Preheat oven to 300°.

Mix sugars, cornstarch, spices & salt, set aside. Whisk egg white until frothy. Stir in pecans and mix until coated. Add spice mixture and stir to coat the nuts. Spread in a single layer onto lined baking sheet and bake 22 minutes. Cool & Serve.

 

CREAM CHEESE FROSTING

 

In Bosch bowl with cookie paddles add:

           

2 – 8 oz. Packages Softened Cream Cheese

1 Stick Butter, Softened

1 - 2 tsp. Vanilla

Powdered Sugar

 

On speed one, mix ingredients thoroughly.  Add powdered sugar by the cup until you have a fluffy, soft consistency (this could be as much as 10 cups or more).  If you prefer, you can add milk to extend the frosting.
