PEACH & MUSTARD GLAZED PORK CHOPS September 28, 2017 16:44

8 Thin Cut Boneless Pork Chops (or 4 thick chops cut in half)
1 tsp Sea Salt
1 tsp Pepper
2 Tbsp Olive Oil
2 Tbsp Butter
¼ Cup Finely Diced Sweet Onion
½ Cup Peach Preserves
1 - 2 Fresh Peaches, peeled and chopped small
½ tsp Vanilla
2 Tbsp Dijon Mustard
¼ tsp Crushed Red Pepper Flakes

Sprinkle pork chops with salt and pepper. In 8 qt deep sauté pan heat oil over
high heat add pork and brown on each side for 2 - 3 minutes or until lightly
browned and internal temperature is 150°. Transfer pork to a serving plate and
cover loosely with foil.

In the same 8qt deep sauté pan over medium high heat melt butter; add onion
and sauté 2 - 3 minutes until tender. Remove from heat and add peach preserves,
fresh peaches, vanilla, Dijon mustard, and crushed red pepper flakes. Cook over
medium heat, stirring often for 1 minute or until preserves are melted.
Spoon glaze over pork chops, serve immediately.
