1 Cup Cooked Garbanzo Beans
1 Tbsp Grapeseed Oil
4 - 6 Hard Boiled Eggs
8 Cups Mixed Greens (about 5 oz)
8 Small Radishes, sliced small
Salt and Pepper to taste
1/3 Cup Seasoned Pumpkin Seeds and Sunflower seeds
1 Avocado, sliced
Avocado Ranch Dressing (see below)
Heat 1 Tbsp oil in a small skillet over medium heat. Add the cooked garbanzo beans and season with salt and pepper. Cook stirring until lightly browned.
Peel and roughly chop the hard boiled eggs. Toss the greens and radishes in a large bowl; season with salt and pepper. Top each salad with the garbanzo beans, seasoned seed mix, eggs, and sliced avocado. Drizzle with avocado ranch.
1 Cup Mayonnaise
2 - 3 Tbsp Homemade Ranch Mix
Buttermilk as needed
Blend the mayonnaise with the avocado and ranch mix. Add buttermilk to thin as needed.
