Natural Yeast Apple Gingerbread Muffins

  • 2 Cups Starter
  • 2 Cups Whole Wheat Flour
  • ¾ Cup Honey
  • ½ Cup Yogurt or Kefir  (Plain)
  • 1 tsp Sea Salt

In the Bosch with the cookie paddles combine the starter, flour, honey, yogurt or kefir, and salt until smooth. Cover and allow to soak for 6 hours or overnight.

  • 2 tsp Baking Soda
  • 2 tsp Sweet Spice Blend
  • 1 tsp Ground Ginger
  • ¼ Cup Molasses
  • ½ Cup Coconut oil, melted or Butter, melted
  • 2 Eggs, slightly beaten
  • 2 Apples peeled, cored, and chopped

In the Bosch with the cookie paddles mix soaked starter with remaining ingredients until combined.

Fill muffin cups ¾ full and bake at 375° for 20 minutes or until a toothpick inserted in the center comes out clean.
