Dressing:

1/2 Cup Grapeseed Oil

1/2 Cup Teriyakin Sauce

1/4 Cup Rice Vinegar

1/4 Cup Reserved Mandarin Orange Liquid

4 Tbsp Sugar

1/2 tsp Salt

1/2 tsp Pepper

In a blender, combine dressing ingredients and blend until well combined.

Salad:

16 oz Bow Tie Pasta, cooked and drained

1 Bag Fresh Spinach, 10 oz

1/2 Cup Dried Pineapple

1/2 Cup Dried Cranberries

2 (11 oz) Cans Mandarin Oranges, Liquid Reserved for Dressing

1/3 C Shredded Coconut

1 (8 oz) Can Water Chestnuts, drained and slivered

1/2 C Fresh Parsley

4 Green Onions, thinly sliced

1/4 Cup Sesame Seeds, toasted

2/3 Cup Honey Roasted Peanuts

Combine salad ingredients in a large bowl and toss with dressing before serving.


Three Grain Greek Salad April 30, 2015 16:43

1/2 Cup Quinoa

1/2 Cup Pearled Barley

1/2 Cup Buckwheat

1 pkg (10 oz) Frozen Chopped Spinach, thawed and squeezed dry

1 1/2 Cups Grumbled Feta Cheese

1 Cup Grape Tomatoes, halved

3/4 Cup Black beans, rinsed and drained

1/2 Cup Chopped, Seeded, Peeled Cucumber

1/2 Cup Sliced Pepperoncini

1/2 Cup Greek Olives, pitted and halved

To cook Quinoa and Buckwheat:  Rinse quinoa and pressure quinoa and buckwheat on high for 3 minutes in pressure cooker with 2 cup watr.  Let pressure come down on its own.  Let cool. 

To cook barley:  Pressure on high for 20 minutes with 1 cup water in pressure cooker.  Allow pressure to drop on its own.  Let cool.

In a large bowl, combine all ingredients.  Pour 1/2 cup vinaigrette over the mixture and toss to coat.  Cover and refrigerate for at least one hour.  just before serving, drizzle remaining vinaigrette over salad; toss to coat.

 

Greek Vinaigrette:

1/2 Cup Red Wine Vinegar

3 Cloves Garlic, minced

1 tsp Dijon Mustard

1 tsp Dried Basil

1 tsp Dried Oregano

3 Tbsp Fresh Lemon Juice

3/4 Cup Olive Oil

Salt and Pepper to taste

Whisk together vinaigrette ingredients.

Salad: 

  • 10 Cups Romaine Lettuce (2 Heads)
  • 1 Cup Shredded Swiss Cheese
  • 2 Apples Cored And Cubed 
  • 2 Pears Cored And Cubed 
  • 1 Cup Chopped Cashews
  • 1/4 Cup Dried Cranberries 

Dressing: 

  • ½ Cup Sugar
  • 1/3 Cup Cider Vinegar 
  • 2 TbspLemon Juice 
  • 2 Tbsp Finely Chopped Onion
  • 2/3 Cup Oil
  • 2/3 Cup Poppy Seeds 

Combine First Five Dressing Ingredients. Slowly Blend In Oil Then Add The Poppy Seeds. Chill Salad And Pour Dressing Over Top. Toss And Serve.
